30 Minute Rolls

I had a request for the recipe for the rolls I made recently.  This is from the Shelf Reliance Website- by Kelsey Nixon.  They are easy, fast and yummy.  What's better than that?

Ingredients
  • 1 3⁄4 c warm water
  • T instant yeast
  • 1⁄2 c oil
  • 3⁄8 c granulated sugar
  • 1⁄2 T thrive iodized salt
  • 1 1⁄2 T thrive whole egg powder (reconstituted)
  • 1 1⁄2 T additional water
  • c thrive whole wheat flour (approximate)

Instructions

*Preheat oven to 400 degrees.
*Use a mixer to combine warm water, instant yeast, oil, and granulated sugar. Let rise 5 minutes until bubbly.
*Add remaining ingredients to bubbling mixture. Mix well and roll out. (I just formed rolls)
*Form dough into rolls and let rise approximately 15 minutes.
*Bake for 10-12 minutes until golden brown. Cool and serve.

Notes

Dough can also be used for pizza crust

Chicken Broccoli, Cheese and Rice Casserole

2 c. Thrive rice
1 1/2 c Thrive chicken
2 c. Thrive broccoli
1 TB Thrive onion 
1 can cream of chicken soup, undiluted
3/4 c water
2 c Thrive shredded cheddar cheese
1/8 c Thrive butter powder

*

Preheat oven to 350

Boil rice, broccoli and onion together until the rice is a little less than done, about 15 minutes.
  Separately boil the chicken for about 10 minutes.  
In a small bowl combine the soup, butter powder, water and 1 1/2 cups of cheddar cheese. 
 Drain rice mixture and pour into large casserole dish, add drained chicken on top of rice mixture.  
Pour the soup mixture over all the ingredients.  
Sprinkle dried cheese on the very top.  (mix in a little to make sure it will be rehydrated during cooking.  You can rehydrate the cheese if you prefer. 
 Bake for 30-35 minutes or until warmed through and mixture has thickened.  

I think this is super yummy and easy too!  

Chicken Salad

Today I’m going to start with a recipe most of you have tried.  It is for the yummy chicken salad.  There are several recipes out there.  This is what I do for my chicken salad that I serve at open houses.
Chicken Salad
3/4 c fd chicken
1/4 c fd onions
1/4 c fd celery
salt
pepper
mayonaise (1/4-1/2 cup)


* fd=freeze dried
I put the first three ingredients all together in one pot.  Bring to a boil.  Boil for about 10 minutes.  Strain and rinse with cold water until the food has cooled down. 




 Then I put this mixture in a paper towel and SQUEEZE out all the excess water. 


 Put cooked ingredients in a bowl add salt and pepper and mayonaise to taste.  






Yesterday my friend Sandra and I made this and added maybe an 1/8 cup of mango and 1/4 cup pecans.  (I am guessing- not really a measurer).  That was super yummy.  Of course you can add whatever else you like.
This is the ONLY way I ever plan to make chicken salad again!
